"I'm a star" tomato soup

Indulge in comforting tomato soup paired with gooey grilled cheese.
Ingredients:
  • 1 brown onion, finely chopped
  • 700ml bottle Italian tomato pasta sauce
  • 1020.00 gm chicken style liquid stock
  • 250.00 ml dried stelline (star-shaped) pasta (see note)
  • 1 zucchini, trimmed
  • 100g tasty cheese, grated
  • 4 slices bread, toasted
Instructions:
  • In a deep saucepan, heat oil over medium-high heat. Add onion and cook, stirring occasionally, for 3 to 4 minutes until soft. Then, add the sauce and stock, and bring to a boil.
  • Add the pasta to the soup and stir until blended. Bring the soup back to a boil, then reduce the heat to low and simmer uncovered for 3 minutes.
  • Grate fresh zucchini and fold it into the simmering soup. Cook for 2 minutes, or until the pasta reaches the desired tenderness. Finish with a sprinkle of salt and pepper to enhance the flavors.
  • Sprinkle cheese over toast and melt under the hot grill for 1 to 2 minutes. Ladle soup into bowls and serve with cheesy toast on the side.
