Cheesy Kale Quesadilla with vibrant kale, bell peppers, onions, and savory spices
Ingredients:
  • 1 tablespoon extra virgin olive oil
  • 1/3 cup finely chopped red bell pepper
  • 1/3 cup finely chopped red onion
  • Pinch of ground cumin
  • 1 1/2 cups thinly sliced kale (remove center rib from kale before slicing)
  • 1/4 teaspoon butter
  • 3/4 cup of grated mild cheddar
  • 2 flour tortillas (use corn tortillas for gluten-free version)
Instructions:
  • In a medium sauté pan over medium-high heat, warm olive oil. Sauté chopped bell pepper and red onion until soft, about 3 minutes. Sprinkle with cumin. Add thinly sliced kale and mix well. Cook for 1 more minute on medium-high heat, then reduce heat to low, cover, and cook for a few more minutes until kale is tender. Remove from heat.
  • 1. Heat a large cast iron pan on medium-high to high heat and spread a little butter in the pan. Add a flour tortilla and cook until air pockets begin to form. Flip the tortilla, reduce heat to medium, and continue cooking.
  • Sprinkle half of the cheese over one side of the tortilla, then add a generous amount of the kale, pepper, and onion mixture on top. Fold the other side over and press gently with a spatula. Cook until the cheese is melted, then flip and cook the other side. Once both sides are golden and cheese is melted, transfer to a cutting board. Repeat with the remaining ingredients for the other tortilla.
  • Slice the "kale"sadilla into thirds and plate it for serving.
