"Light as a Feather" Scones

Deliciously flaky scones, great for snacking or breakfast.
Ingredients:
  • cooking spray
  • 2 cups sifted all-purpose flour
  • 0.25 cup white sugar
  • 1 teaspoon baking powder
  • 5 tablespoons unsalted butter, cubed
  • 0.75 cup reduced-fat vanilla yogurt
  • 1 egg, beaten
  • 1 tablespoon milk
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and generously spray a baking sheet with cooking spray.
  • Combine flour, 1/4 cup sugar, baking powder, and salt in a bowl. Incorporate butter using your fingers until mixture resembles coarse crumbs. Gently fold in yogurt, egg, and vanilla extract until dough just comes together.
  • Transfer the dough onto a lightly floured surface. Give it a quick knead for about five or six turns. Gently shape the dough into a 1-inch thick round. Cut it into 8 wedges and arrange them on the baking sheet. Brush each wedge with milk and sprinkle with the remaining tablespoon of sugar before baking.
  • Place in the preheated oven until golden brown, approximately 15 minutes. Enjoy warm or let cool completely before storing in an airtight container.
