"Plastered" Pork Tacos with Apple-Jalapeno Salsa

Salt-crusted pork enhances juicy flavor in tacos with apple-jalapeno salsa.
Ingredients:
  • 1 (3 1/2) pound bone-in pork shoulder roast
  • 2 tablespoons minced fresh rosemary
  • 1 tablespoon freshly ground black pepper
  • 2 cups all-purpose flour, or more as needed
  • 0.5 cup kosher salt
  • 1 large egg white
  • 0.75 cup water, or more as needed
  • 2 cups finely diced Honeycrisp apple
  • 0.66666668653488 cup finely diced white onion
  • 0.5 cup seeded and finely diced jalapeno pepper
  • 0.5 cup chopped fresh cilantro
  • 1 teaspoon salt, or to taste
  • 2 limes, juiced, or to taste
  • 2 pinches cayenne pepper
  • 12 flour tortillas, warmed
  • 2 limes, cut into wedges, or as needed
Instructions:
  • Preheat your oven to 325°F (165°C) for optimal baking temperature.
  • Coat pork generously with fragrant rosemary and freshly ground black pepper.
  • Combine flour, salt, egg white, and water in a large bowl, stirring until smooth. If the mixture is too runny, add more flour. Thoroughly coat the pork shoulder with the mixture.
  • Spread a generous layer of excess "plaster" in a baking dish or pan, placing the fat side up. Use a spoon to smooth out any imperfections and coat the top evenly with more plaster, as needed.
  • Roast in the center of the preheated oven for about 3 1/2 hours until the surface is dry and hard, and an instant-read thermometer reads 185°F (85°C).
  • Allow pork to cool for 15 minutes to 1 hour. Break the pork into large chunks and place them on a plate. Drizzle some of the flavorful pan juices over the pork. Cover with plastic wrap and refrigerate for at least 8 hours, or overnight.
  • Mix together fresh apple, crisp onion, spicy jalapeno, fragrant cilantro, a pinch of salt, tangy lime juice, and a hint of cayenne in a bowl to create a flavorful salsa.
  • Dice the chilled pork into 1/2-inch cubes after slicing it into strips.
  • Preheat a nonstick pan over medium-high heat. Sear pork in the pan for 3 to 5 minutes until browned. Serve on warm tortillas with salsa and lime wedges.
