Springtime snack: Buttered toast with ham, asparagus, and melted Edam cheese.
Ingredients:
  • 16 white asparagus spears
  • salt to taste
  • 8 slices white bread
  • 2 tablespoons butter, or to taste
  • 4 thick slices ham, cut in half
  • 8 slices Edam cheese
Instructions:
  • Peel white asparagus from top to bottom using a vegetable peeler, starting below the tips. Trim off any woody ends with a knife.
  • In a wide saucepan, combine asparagus spears and salt. Add enough water to cover them. Bring to a gentle boil, then simmer until asparagus is tender and easily pierced with a knife, about 15-25 minutes. Drain the cooked asparagus.
  • Position oven rack 6 inches below heat source and preheat broiler.
  • Toast slices of bread until golden and crisp, then lay them out on a baking sheet. Generously spread with decadent butter while the bread is still warm.
  • Place 1/2 slice of ham on each slice of bread, trimming excess. Cut asparagus spears in half and distribute evenly over the ham. Top with Edam cheese to cover the asparagus.
  • Broil until the cheese is bubbling and slightly browned, about 3 minutes.
