Delicious Serbian dessert: ground wheat with nuts and sugar topped with whipped cream. Serve elegantly in small bowls.
Ingredients:
  • 1 cup whole wheat berries
  • 3.5 cups chopped walnuts
  • 2 cups confectioners' sugar
  • 2 tablespoons blanched slivered almonds
  • 0.25 cup cold heavy whipping cream
Instructions:
  • Prepare the wheat berries: Place them in a 3-quart saucepan and cover with boiling water. Bring to a rolling boil for 15 seconds, then drain the water. Repeat this process five times.
  • Pour boiling water over wheat berries until they are covered by 2 inches. Stir in salt and bring to a boil. Boil for 15 seconds, then remove from heat without draining. Place the pan on a folded blanket, cover, and wrap with towels or blankets. Let it rest at room temperature for 8 hours or overnight.
  • The following day, remove any excess water. Grind wheat berries in a food processor until finely ground, working in small batches if using a blender. Transfer the ground wheat to a bowl and clean the food processor.
  • Pulse walnuts in food processor until finely ground. Add confectioners' sugar and process until mixture resembles fine meal. Mix in ground wheat until fully combined.
  • Transfer the pudding into a glass trifle bowl or serving dish. Insert slivered almonds into the pudding to create a porcupine look.
  • Prepare the topping by whipping cold cream in a chilled glass or metal bowl with an electric mixer until stiff peaks form.
  • Divide pudding into 2-tablespoon portions in charming bowls or custard cups. Finish each with a dollop of whipped cream.
