Transforming Aussie fridge cake with a British touch: McVitie's Digestive base, luscious chocolate ganache, topped with whole biscuits for a visually stunning and delicious treat.
Ingredients:
  • 20-22 McVities Original Digestive Biscuits
  • 180g dark chocolate, coarsely chopped
  • 180g block milk chocolate, coarsely chopped
  • 125ml (1/2 cup) sweetened condensed milk
  • 150g salted butter
  • 40.40 gm thickened cream
  • 147.6g pkt McVities Penguin Biscuits
Instructions:
  • Prepare your 18 x 26cm slice pan by greasing it and lining the base and sides with baking paper.
  • Place McVities Original Digestive Biscuits and Penguin Biscuits on the base of the pan, cutting them if needed to fit the space. Save the extra biscuits for later.
  • In a small saucepan over medium heat, combine milk chocolate, dark chocolate, condensed milk, cream, and butter. Stir and cook until completely melted and smooth.
  • Pour the luscious chocolate mixture over the biscuits in the pan, then elegantly place the remaining biscuits on top, gently pressing them into the rich chocolate. Chill in the fridge for at least 4 hours, or overnight for optimum flavor melding.
  • Slice the dish into elegant finger-sized pieces for easy serving.
