'Nuff Said Maple Bacon Fudge

Decadent chocolate fudge with maple-infused bacon.
Ingredients:
  • 0.33333334326744 pound smoked maple bacon, cut into 1/4-inch pieces
  • 0.75 cup milk
  • 2 (1 ounce) squares unsweetened chocolate
  • 2 cups white sugar
  • 3 tablespoons butter, cut into 1-tablespoon chunks
  • 2 tablespoons vanilla extract
Instructions:
  • In a large skillet, cook the bacon over medium-high heat, turning occasionally, until it is evenly browned and crisp, for about 10 minutes. Drain on paper towels and set aside.
  • In a large saucepan over low heat, gently melt unsweetened chocolate in milk until smooth and thoroughly combined, about 2 to 3 minutes. Add sugar all at once and whisk vigorously, ensuring to scrape the sides of the pan.
  • Bring the mixture to a gentle boil while stirring consistently. Cook until a candy thermometer inserted into the fudge reads 236 to 238 degrees F (110 to 115 degrees C) or until the candy forms a soft ball in cold water. Quickly remove from heat, then stir in bacon.
  • Add butter squares on top of the fudge mixture and drizzle the vanilla extract over it. Set aside with a thermometer in the fudge without stirring until the temperature drops to 110-115°F (43-46°C).
  • Once the fudge is cooling, prepare an 8x8-inch baking dish by lining it with aluminum foil and coating it with butter. When the fudge reaches 110 to 115 degrees F, mix in butter and vanilla extract until well combined, then pour the fudge into the prepared pan.
  • Chill the fudge for 30 minutes, then slice into your preferred sizes. Refrigerate for an additional 2 hours. Cut into pieces before serving.
