Spinach salad with almonds, cranberries, and homemade sesame dressing.
Ingredients:
  • 1 tablespoon butter
  • 0.75 cup almonds, blanched and slivered
  • 1 pound spinach, rinsed and torn into bite-size pieces
  • 1 cup dried cranberries
  • 0.5 cup vegetable oil
  • 0.5 cup white sugar
  • 0.25 cup cider vinegar
  • 0.25 cup white wine vinegar
  • 2 tablespoons toasted sesame seeds
  • 1 tablespoon poppy seeds
  • 2 teaspoons minced onion
  • 0.25 teaspoon paprika
Instructions:
  • In a saucepan over medium heat, melt the butter and toast the almonds until golden. Allow to cool before using.
  • Prepare the dressing by combining oil, sugar, cider vinegar, white wine vinegar, sesame seeds, poppy seeds, minced onion, and paprika in a medium bowl and whisking them together until well blended.
  • In a large serving bowl, mix together spinach, toasted almonds, and cranberries. Drizzle dressing over the mixture and toss until well combined.
