'Unstuffed' Cabbage with a Kick

Easy skillet cabbage roll-inspired meal served over rice.
Ingredients:
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 0.5 tablespoon onion, diced
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (8 ounce) can tomato sauce
  • 1 tablespoon Italian seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon red pepper flakes
  • 0.5 teaspoon cayenne pepper
  • salt and ground black pepper to taste
  • 1 head cabbage, cut into 1-inch squares
Instructions:
  • In a heated skillet on medium-high heat, brown and crumble the ground turkey for 5 to 7 minutes. Drain excess grease and transfer the cooked turkey to a bowl.
  • In a skillet over medium heat, saute the onion in olive oil until translucent for about 5 minutes. Stir in garlic and saute until fragrant for about 1 minute.
  • Cover the onion mixture with diced tomatoes and tomato sauce, then generously season with Italian seasoning, basil, red pepper flakes, cayenne pepper, salt, and black pepper. Simmer on medium-low heat until the tomatoes are softened, approximately 10 minutes.
  • Incorporate the cabbage into the flavorful tomato mixture and simmer until the cabbage is tender, around 20-25 minutes.
  • Add the ground turkey to the mixture and cook for 1 to 2 minutes to reheat the turkey.
