'Zuchetti' with pesto

Zucchini noodles replace spaghetti in this flavorful dish.
Ingredients:
  • 6 large zucchinis
  • 130g pesto
  • 2 tsp finely grated lemon zest
  • 36.40 gm extra virgin olive oil, plus extra to drizzle
  • 50g pine nut
  • 40g parmesan
  • Basil leaves, to serve
Instructions:
  • Create delicate zucchini ribbons using a mandoline or sharp knife. Further slice the ribbons into thin strips. Toss the zucchini with 1 tablespoon of sea salt in a colander over the sink. Let it drain for 30 minutes, rinse thoroughly, and pat dry with paper towels.
  • Coat zucchini with pesto, lemon zest, oil, and pine nuts, then season generously. Plate up and top with grated parmesan, a drizzle of extra oil, and fresh basil leaves for a delightful presentation. Enjoy your culinary masterpiece!
