Quick and easy sticky date microwave mug cakes - ready in just 15 minutes!
Ingredients:
  • 100g pitted dates, finely chopped
  • 60g butter
  • 1.25 gm bicarbonate of soda
  • 150g (1 cup) self-raising flour, sifted
  • 140g (2/3 cup, firmly packed) brown sugar
  • 2 eggs, lightly whisked
  • 4.40 gm vanilla bean extract
  • Caramel sauce, warmed, to serve
  • Thickened cream, whipped, to serve
Instructions:
  • Grease four 250ml (1 cup) microwave-safe mugs with a touch of butter.
  • In a microwave-safe jug, mix together the dates, butter, and 125ml (1/2 cup) water. Microwave on High for 1 minute until the butter melts. Stir in the bicarb until well combined. Let it sit for 2 minutes to soften the dates, stirring occasionally.
  • In a bowl, mix together flour and sugar. Add the date mixture, egg, and vanilla. Stir until just combined. Divide the batter evenly into the mugs. Microwave on High for 3 1/2 minutes or until the cakes spring back when lightly pressed.
  • Top with cream and drizzle with caramel sauce before serving.
