Quick and easy sticky date microwave mug cakes - ready in just 15 minutes!

Ingredients:

100g pitted dates, finely chopped
60g butter
1.25 gm bicarbonate of soda
150g (1 cup) self-raising flour, sifted
140g (2/3 cup, firmly packed) brown sugar
2 eggs, lightly whisked
4.40 gm vanilla bean extract
Caramel sauce, warmed, to serve
Thickened cream, whipped, to serve

Instructions:

Grease four 250ml (1 cup) microwave-safe mugs with a touch of butter.
In a microwave-safe jug, mix together the dates, butter, and 125ml (1/2 cup) water. Microwave on High for 1 minute until the butter melts. Stir in the bicarb until well combined. Let it sit for 2 minutes to soften the dates, stirring occasionally.
In a bowl, mix together flour and sugar. Add the date mixture, egg, and vanilla. Stir until just combined. Divide the batter evenly into the mugs. Microwave on High for 3 1/2 minutes or until the cakes spring back when lightly pressed.
Top with cream and drizzle with caramel sauce before serving.
