Make a speedy vegetarian zucchini and ricotta pizza at home for a cheesy delight in just 17 minutes.
Ingredients:
  • 450g pkt stone-baked pizza bases
  • 90g (1/3 cup) tomato paste
  • 155g (1 1/2 cups) pre-grated pizza cheese
  • 150g fresh ricotta, crumbled
  • 1/2 tsp dried chilli flakes (optional)
  • 1 zucchini, thinly sliced with a mandolin
  • 200g pkt tomato medley, halved
  • 135g (3/4 cup) stuffed green olives
  • 82.50 ml fresh basil leaves
  • Balsamic glaze, to drizzle
Instructions:
  • Preheat your oven to a toasty 240C/220C fan forced. Then generously smother the pizza bases with zesty tomato paste. Enjoy the flavorful journey ahead!
  • Layer with half of the pizza cheese, then add the ricotta and chili flakes if desired. Place the zucchini, tomato, stuffed olives, and basil over the cheese. Sprinkle the rest of the pizza cheese on top and spray with olive oil. Season with salt and pepper. Bake on oven racks for 10 minutes until cheese is golden and the crust is crisp. Finish with a drizzle of olive oil and balsamic glaze, if preferred.
