1970's French Strawberry Pie

Decadent strawberry cream cheese tart on buttery shortbread.
Ingredients:
  • 1 (4 ounce) package cream cheese, softened
  • 1 tablespoon heavy whipping cream
  • 1 (9 inch) prepared shortbread pie crust (such as Keebler®)
  • 2 cups fresh strawberries, quartered
  • 2 cups fresh strawberries, mashed
  • 1 cup white sugar
  • 0.25 cup cornstarch
  • 1 cup heavy whipping cream
  • 0.25 teaspoon vanilla extract
Instructions:
  • In a bowl, whip together cream cheese and 1 tablespoon of heavy cream until smooth. Spread mixture onto the bottom of the pie crust. Place around 2 cups of quartered strawberries on top of the cream cheese layer.
  • Combine 2 cups of mashed strawberries, 1 cup of sugar, and cornstarch in a saucepan. Cook over medium heat until the mixture is slightly reduced and thickened, approximately 10 minutes. Let it cool completely.
  • Drizzle the chilled strawberry mixture over the layer of fresh strawberries in the pie crust. Refrigerate until firm, about 2 hours.
  • Whisk together 1 cup heavy cream, 2 tablespoons sugar, and vanilla extract until airy and smooth, approximately 5 minutes. Gently layer over the chilled pie.
