5 tips from Vicki and Misha Collins' cookbook for raising adventurous eaters, plus a fun video making beet gnocchi.
Ingredients:
  • 2 medium raw beets (about 8 ounces total)
  • 1/4 teaspoon sea salt
  • 1 tablespoon olive oil
  • 1 1/2 cups all-purpose flour, plus more for dusting
  • 3/4 cup coarsely grated Parmesan cheese
  • 1 teaspoon coarse salt
  • 1 large egg
  • 1 cup ricotta cheese
  • Butter or olive oil
  • 1/4 cup finely grated Parmesan cheese for garnish
Instructions:
  • Cook the beets in a small saucepan by covering them with cold water, adding a pinch of salt, and bringing to a gentle boil. Boil for 30 to 45 minutes until a fork can be easily inserted into the beets. Once done, they should easily slide off the fork when lifted. Drain and allow to cool.
  • Prepare the beets: Peel and quarter them, then blend with olive oil and a splash of water until smooth.
  • Prepare the gnocchi dough: Spread the flour on a stain-resistant surface. Form a well in the center, then add Parmesan, salt, and crack in the egg. Break the yolk, mix in the flour and cheese gradually. Once half the flour is mixed, add the beet puree and ricotta. Knead the dough on a floured surface until smooth and evenly colored.
  • To allow the gnocchi dough to rest, generously dust your work surface with flour, place the dough on top, and cover it with a bowl. Let it relax for 30 minutes without overmixing. (Don't worry, no need to "knead" it too much!)
  • Gnocchi shaping (FUN FOR KIDS!): Divide the dough into 4 sections and roll each into ropes the thickness of an adult's thumb. Let the little chefs use a kid-friendly knife to cut the ropes into 1/2-inch pieces. Press a fork gently into each piece for texture.
  • Prepare the gnocchi: Boil a pot of salted water. Add the gnocchi and stir. Once they float to the surface, cook for an additional minute. Remove with a slotted spoon and place in a bowl.
  • Garnish with a drizzle of olive oil or melted butter, a pinch of salt, and freshly grated Parmesan.
