Canton Aargau's famous Carrot Cake: Moist, light, and delicious, made with fresh produce and no added fat besides eggs.
Ingredients:
  • 0.75 cup white sugar
  • 1.5 teaspoons grated lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 cup grated carrots
  • 1 cup ground almonds
  • 0.25 cup all-purpose flour
  • 1 pinch salt
  • 0.75 cup confectioners' sugar
  • 1 tablespoon lemon juice
Instructions:
  • Grease the 9-inch cake pan with a dab of cooking oil and dust with flour. Preheat oven to 360 degrees F (180 degrees C).
  • Beat the yolks into the sugar until thoroughly combined. Stir in lemon juice, grated rind, carrots, almonds, flour, baking powder, and salt until well mixed.
  • Whisk egg whites until they form stiff peaks, then gently fold them into the cake batter. Transfer the batter to a 9-inch cake pan.
  • Bake at 360°F (180°C) for 45 minutes until golden brown and perfectly cooked.
  • Prepare a delicious icing by combining 3/4 cup of confectioners sugar with 1 tablespoon of freshly squeezed lemon juice. Top the cake with adorable marzipan carrots for a classic finish.
