Parmesan-covered chicken breasts stuffed with garlic, mozzarella, and prosciutto, rolled up and baked in white wine.
Ingredients:
  • 6 skinless, boneless chicken breast halves
  • 0.5 cup shredded Parmesan cheese
  • 1 clove garlic, finely chopped
  • 4 teaspoons butter
  • 4 ounces thinly sliced prosciutto
  • 10 ounces sliced whole milk mozzarella cheese
  • 0.33333334326744 cup white wine
  • 0.25 cup olive oil
  • 1 pinch black pepper
Instructions:
  • Preheat the oven to a toasty 325°F (165°C).
  • Pound chicken breasts to 1/2-inch thickness using a meat mallet between plastic wrap. Sprinkle generously with Parmesan cheese on both sides. Place a pinch of garlic and 1 teaspoon of butter in the center of each breast. Top with prosciutto and mozzarella, saving some prosciutto to place on top. Roll up chicken breasts and secure with toothpicks.
  • In a 9x13-inch baking dish, gently mix together the white wine and olive oil. Lay the chicken rolls in the dish. Top each roll with a piece of prosciutto and a sprinkle of black pepper.
  • Roast in the preheated oven for around 30 minutes, until chicken is fully cooked with clear juices, and an instant-read thermometer reaches at least 165 degrees F (74 degrees C).
