Savory Indian lentil and rice crepes for a unique breakfast twist.
Ingredients:
1cupsplit Bengal gram (chana dal)
1cupskinned splitblack lentils (urad dal)
0.5 cupsplit yellow lentils (moong dal)
1cuprice
salt to taste
2dried red chile peppers, or to taste
water, as needed
2tablespoons cumin seeds
2tablespoons cooking oil
Instructions:
Combine the chana dal, urad dal, moong dal, and rice in a large bowl and cover with cool water, soaking for 8 hours to overnight.
Use a mortar and pestle to crush the soaked dal and rice with salt and red chile peppers into a smooth paste. Adjust the consistency by adding water until it's spreadable. Mix in cumin seeds.
Preheat a griddle (or a tawa) over medium heat. Lightly oil the griddle's edges and center. Pour the batter onto the griddle and spread it into a thin circle using the back of a ladle or a large spoon. Cook until golden, then flip. Continue cooking until both sides are golden. Transfer to a plate and serve hot for the best taste.
