Savory Indian lentil and rice crepes for a unique breakfast twist.
Ingredients:
  • 1 cup split Bengal gram (chana dal)
  • 1 cup skinned split black lentils (urad dal)
  • 0.5 cup split yellow lentils (moong dal)
  • 1 cup rice
  • salt to taste
  • 2 dried red chile peppers, or to taste
  • water, as needed
  • 2 tablespoons cumin seeds
  • 2 tablespoons cooking oil
Instructions:
  • Combine the chana dal, urad dal, moong dal, and rice in a large bowl and cover with cool water, soaking for 8 hours to overnight.
  • Use a mortar and pestle to crush the soaked dal and rice with salt and red chile peppers into a smooth paste. Adjust the consistency by adding water until it's spreadable. Mix in cumin seeds.
  • Preheat a griddle (or a tawa) over medium heat. Lightly oil the griddle's edges and center. Pour the batter onto the griddle and spread it into a thin circle using the back of a ladle or a large spoon. Cook until golden, then flip. Continue cooking until both sides are golden. Transfer to a plate and serve hot for the best taste.
