African Sweet Potato and Peanut Soup

Sweet potatoes complemented by peanut and warm spices.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons minced fresh ginger root
  • 1.5 teaspoons ground cumin
  • 1.5 teaspoons ground coriander
  • 0.5 teaspoon ground cinnamon
  • 1 pinch ground cloves
  • 3 medium tomatoes, chopped
  • 1.5 pounds sweet potatoes, peeled and chopped
  • 1 carrot, peeled and chopped
  • 4.5 cups water
  • 1 teaspoon salt
  • 0.25 cup chopped, unsalted dry-roasted peanuts
  • 1 pinch cayenne pepper
  • 2 tablespoons creamy peanut butter
  • 1 bunch chopped fresh cilantro
Instructions:
  • In a large saucepan over medium-high heat, heat the oil until shimmering. Cook the onion for 10 minutes until lightly browned. Add in the garlic, ginger, cumin, coriander, cinnamon, and cloves. Stir in the tomatoes, sweet potatoes, and carrot, cooking and stirring for an additional 5 minutes.
  • In a saucepan, add water and generously season with salt. Bring to a boil, then reduce heat and let it simmer for 30 minutes.
  • Take the soup off the heat. Blend the soup and peanuts until almost smooth in a food processor or blender. Season with cayenne pepper, then return to the saucepan. Stir in the peanut butter and heat through. Serve warm with a sprinkle of fresh cilantro.
