Agatha's Oversized Cinnamon Rolls

Babka-inspired twisted cinnamon rolls topped with sweet glaze.
Ingredients:
  • 3.75 cups all-purpose flour, divided
  • 0.5 cup white sugar
  • 1 (.25 ounce) package active dry yeast
  • 0.5 teaspoon kosher salt
  • 1 cup milk
  • 0.25 cup unsalted butter, cut into chunks
  • 1 egg, at room temperature
  • 0.5 cup packed light brown sugar
  • 1.5 teaspoons ground cinnamon
  • 0.25 cup unsalted butter, softened
  • 0.5 cup chopped walnuts
  • 0.5 cup raisins
  • 1 cup confectioners' sugar
  • 4 teaspoons water, or more if needed
Instructions:
  • In a mixing bowl, blend together 1 cup of flour, sugar, yeast, and salt.
  • Warm the milk and butter pieces in a saucepan on medium-low heat until the butter is melted and the mixture reaches 110°F (43°C), approximately 5 minutes.
  • Combine warm milk mixture with yeast mixture, beat with an electric mixer for 2 minutes. Add 1 cup flour and egg, beat for 2 more minutes. Mix in 1 1/2 cups flour until smooth. Knead for 10 minutes, gradually adding remaining 1/4 cup flour. Shape dough into a ball.
  • Prepare a greased bowl and transfer the dough inside, making sure the greased side is facing up. Cover the bowl and allow the dough to rise until doubled in size, approximately 1 hour.
  • Gently deflate the dough and allow it to rest for 15 minutes.
  • In a small bowl, mix together the brown sugar and cinnamon. Grease a 9x13-inch baking pan.
  • On a lightly floured surface, roll out the dough into an 8x24-inch rectangle. Spread the softened butter evenly over the dough. Sprinkle the cinnamon-sugar mixture, walnuts, and raisins over the dough.
  • Roll dough into a 24-inch log, starting from the edge nearest to you. Carefully slice the log in half lengthwise to create two 24-inch strips. Lay the strips side by side with the cut sides facing up. Press one set of ends together, twist the strips tightly around each other, keeping the cut sides facing up, then pinch the ends to seal.
  • Cut twisted log into 6 equal pieces and seal ends tightly. Transfer to the baking pan, gently press down to level the rolls, cover, and allow to rise until doubled in size, approximately 45 minutes.
  • Preheat your oven to 400 degrees F (200 degrees C).
  • Bake rolls until the top is golden brown in the preheated oven for about 25 minutes. Remove from oven and let them cool slightly.
  • Combine confectioners' sugar and water until it reaches a pourable consistency, then generously drizzle over the freshly baked rolls.
