Refreshing Thai cucumber salad, perfect for fried, grilled appetizers and curries. Best made ahead for enhanced flavors.
Ingredients:
  • 0.5 cup white vinegar
  • 0.25 cup water
  • 4 tablespoons white sugar, or more to taste
  • 6 cucumbers, peeled and thinly sliced
  • 3 shallots, thinly sliced
  • 2 Thai bird's eye chiles, halved lengthwise
Instructions:
  • In a saucepan over medium heat, mix vinegar, water, sugar, and salt. Bring to a boil and cook for 3 to 5 minutes until sugar and salt dissolve. Taste and adjust seasoning for a perfect balance of sweet, sour, and savory flavors in the pickling liquid.
  • In a large bowl, toss together cucumbers, shallots, and chile peppers. Pour the pickling liquid over the mixture. Chill in the refrigerator for a couple of hours to enhance the flavors.
