Inspired by a hometown butcher shop, this is a modern twist on a classic Al Capone Roast.
Ingredients:
  • 3 pounds flank steak, pounded thin for easy rolling
  • 1 (4 ounce) can finely chopped black olives
  • 1 cup minced fresh mushrooms
  • 8 slices prosciutto
  • 6 slices mortadella
  • 10 slices mozzarella cheese
  • 10 slices pepperoni sausage
  • 1 tablespoon Italian seasoning, divided
  • 1 teaspoon garlic powder, or to taste
  • 1 teaspoon steak seasoning
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Massage flank steak with olive oil. Add mushrooms and olives (if desired). Layer prosciutto, mortadella, mozzarella, and pepperoni. Sprinkle with Italian seasoning. Roll up steak enclosing the filling, then secure with string. Season the outside with Italian seasoning, garlic powder, and steak seasoning.
  • Preheat a large cast iron skillet over high heat. Sear the roast on all sides. Transfer the skillet with the seared roast to the oven.
  • Roast in a preheated oven for 1 hour, or until the center of the roast reaches an internal temperature of 160 degrees F (70 degrees C. Allow it to rest for 10 minutes before slicing and serving.
