Create a light Alfredo sauce using skim milk, broth, flour, and tangy Parmesan cheese.
Ingredients:
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 2 teaspoons vegetable oil
  • 2 cups skim milk
  • 1 cup chicken broth
  • 3 tablespoons all-purpose flour
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.5 cup grated Parmesan cheese
  • 16 ounces dry fettuccine pasta
  • 1 (16 ounce) package frozen broccoli florets
Instructions:
  • Heat oil in a medium saucepan over medium heat. Sauté onion and garlic until golden brown.
  • Combine milk, chicken broth, flour, salt, and pepper in a small saucepan over low heat until smooth and thickened. Mix into onion mixture and continue cooking over medium-low heat, stirring frequently, until the sauce thickens. Finally, fold in the Parmesan cheese.
  • While the pasta is boiling, toss in the broccoli during the last few minutes of cooking. Cook until the pasta is al dente.
  • After cooking, drain the pasta and vegetables, then mix them in a large bowl with the sauce before serving.
