Tender veal shanks braised in a comforting blend of vegetables.
Ingredients:
  • 0.25 cup all-purpose flour
  • 2 tablespoons chopped fresh parsley
  • salt and ground black pepper to taste
  • 4 veal shanks
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 carrots, diced
  • 4 stalks celery, diced
  • 0.5 cup dry white wine
  • 1 (14.5 ounce) can diced tomatoes
  • 1 tablespoon chopped fresh thyme
  • 2 bay leaves
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • Combine the flour and parsley in a bowl, season generously with salt and pepper. Coat the veal shanks in the seasoned flour mixture, shaking off any excess flour.
  • In a large skillet over medium heat, heat olive oil until shimmering. Add veal and fry until golden brown, about 10 minutes. Transfer veal to a large baking dish and set aside.
  • Saute onion, carrots, and celery in the flavorful skillet from frying the veal until veggies start to caramelize, around 5 minutes. Move veggies to the baking dish, then add wine to the skillet. Boil and deglaze for extra flavor, simmer until wine reduces by half, approximately 5 minutes on medium-low heat.
  • Combine wine, tomatoes, thyme, and bay leaves in a pot and simmer for about 10 minutes until tomatoes are hot. Pour the hot tomato mixture over the veal and vegetables, then stir to combine. Cover the baking dish with aluminum foil.
  • Cook the veal in the preheated oven until it's incredibly tender, for about 90 minutes.
