Sweet potato pudding with brown sugar and spices, a delectable side dish reminiscent of sweet potato pie.
Ingredients:
  • 1 (29 ounce) can sweet potatoes
  • 2 large eggs
  • 1 cup packed brown sugar
  • 0.25 cup unsalted butter, melted
  • 2 teaspoons lemon juice
  • 0.25 teaspoon ground ginger
  • 0.5 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease a 1 1/2-quart baking dish.
  • Combine sweet potatoes and eggs in a mixing bowl, and mix using an electric mixer until fully blended. Add brown sugar, milk, melted butter, lemon juice, ginger, cloves, cinnamon, and salt, and beat until smooth. Pour the mixture into the prepared dish.
  • Bake in the preheated oven for approximately 30 minutes until the top turns a delicious golden brown and the dish is heated through.
