Almond Angel Cookies

Festive Christmas cookies topped with almonds, pretzels, and icing - a heavenly treat!
Ingredients:
  • 1 cup butter or margarine, softened
  • 1 cup sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • 2 1/2 cups Gold Medal™ all-purpose flour
  • 2 tablespoons Betty Crocker™ yellow sugar
  • 2 tablespoons Betty Crocker™ blue sugar
  • 96 small pretzel twists
  • 2 tablespoons sliced almonds
  • 1 tube (4.25 oz) Betty Crocker™ yellow decorating icing
  • 1 tube (4.25 oz) Betty Crocker™ pink decorating icing
Instructions:
  • In a large bowl, use an electric mixer to beat butter until light and fluffy. Add sugar and continue beating until creamy, remembering to scrape the bowl. Stir in milk, vanilla, almond extract, and salt. Finally, mix in flour until well combined. Enjoy!
  • Place 1/2 cup of dough into a resealable food-storage plastic bag and refrigerate. Divide the rest of the dough into two equal parts and roll each into a 6-inch log. Coat one log in yellow sugar and the other in blue sugar. Individually wrap the logs in plastic wrap or waxed paper and refrigerate until firm, at least 2 hours.
  • Preheat oven to 350°F. Place 2 pretzels with flat sides touching on ungreased large cookie sheets, 3 inches apart for each cookie. Cut dough into 48 (1/4-inch) slices. Fold in opposite sides at the top of each slice to form a triangular-shaped body for the angel. Arrange each slice on top of the pretzels to create angel wings on each side. Press lightly into the pretzels. Roll 1/2 teaspoon of reserved dough into a ball for the head of each angel. Press 2 sliced almonds into the dough to create a songbook. Repeat to make a total of 48 cookies.
  • Bake for 11 to 14 minutes until edges are firm and just starting to brown. Let cool for 2 to 3 minutes, then transfer from the cookie sheet to a cooling rack. Allow to cool completely, approximately 15 minutes.
  • Decoratively pipe yellow icing onto the cooled cookies for the eyes and hair. Then, use pink decorating icing to draw on the mouths. Allow the frosting to set before serving.
