Kid-approved veggie soup with ground beef and zesty veggie juice - a speedy, satisfying meal!
Ingredients:
  • 1 pound ground round
  • 3 cubes beef bouillon
  • 3 cups hot water
  • 1 (46 fluid ounce) bottle spicy vegetable juice cocktail
  • 1 pound frozen mixed vegetables, thawed
  • 8 ounces uncooked alphabet pasta
  • 6 cups water
  • salt and pepper to taste
Instructions:
  • Brown the meat in a large stock pot over medium-high heat. Leave about 2 tablespoons of juices in the pot after draining.
  • Combine the dissolved bouillon cubes with meat in the stock pot. Stir in spicy vegetable juice cocktail, mixed vegetables, alphabet pasta, and water. Simmer for 20 minutes until pasta is tender. Season with salt and pepper to taste and serve.
