Experience authentic Italian pea soup from Altamura, Puglia: a family recipe with just 4 ingredients, ready in 15 minutes.
Ingredients:
  • 2 medium onions
  • olive oil
  • 4 large handfuls of freshly podded peas
  • 1.1 litres organic chicken stock
  • 255 g dried spaghetti
  • 1 sprig of fresh mint optional
  • 1 sprig of fresh basil optional
  • 1 sprig of fresh rosemary optional
  • extra virgin olive oil
  • 1 small handful of fresh flat-leaf parsley
Instructions:
  • Peel and finely chop the onions. Sauté in a generous amount of olive oil for 10 minutes until soft. Add peas and chicken stock, bring to a boil, and simmer for 10 more minutes. Break spaghetti into 2.5cm pieces. Cook in boiling salted water for half the recommended time, then transfer to the soup. Tie herbs in a bundle for flavor infusion. Season the soup with salt and pepper. Remove herb bundle and garnish with chopped parsley before serving. Finish with a drizzle of olive oil.
