Amanda's linguine vongole

Inspired by summers in Milan, a quick and easy clam pasta recipe that captures the bold flavors of Italy. A nostalgic dish to recreate the taste of youth.
Ingredients:
  • 150 g dried linguine
  • 2 cloves of garlic
  • 1 bunch of fresh flat-leaf parsley
  • 500 g clams scrubbed, from sustainable sources
  • olive oil
  • 1 pinch of dried red chilli flakes
  • 125 ml dry white wine
  • extra virgin olive oil
Instructions:
  • Start by cooking the pasta in a large pot of boiling salted water as per the packet instructions. While the pasta cooks, finely chop the garlic and parsley together, including the stalks. Check the clams, tapping any open ones to discard. In a large pan over high heat, sauté the garlic and chili flakes in olive oil until lightly golden. Add the clams and wine, cover, and cook until the clams open. Combine the cooked pasta with the clams and simmer together briefly. Adjust the seasoning, add parsley and a drizzle of extra virgin olive oil, then toss everything well. Serve this delectable dish with a glass of chilled white wine.
