Indulge in savory beef and mushroom stuffed peppers paired with salad and breadsticks for a satisfying twist on a classic dish - a rice-free delight!
Ingredients:
  • 1 pound ground beef
  • 0.5 cup bread crumbs
  • 0.5 teaspoon Italian seasoning
  • 3 cloves garlic, chopped
  • 0.75 cup shredded mozzarella cheese
  • 0.75 cup grated Parmesan cheese
  • 1 egg, lightly beaten
  • 6 white mushrooms, chopped
  • 0.5 small onion, finely chopped
  • 4 bell peppers, tops cut off and seeded
  • 1 (26 ounce) can spaghetti sauce
Instructions:
  • Preheat your oven to a cozy 350 degrees F (175 degrees C) and elegantly line a 9x13 inch baking dish with aluminum foil.
  • Combine ground beef, bread crumbs, Italian seasoning, garlic, 1/2 cup mozzarella, 1/2 cup Parmesan, egg, onion, and mushrooms in a large bowl. Fill seeded bell peppers with mixture, replace tops, and arrange in a lined baking dish.
  • Place in a hot oven for one hour, or until the meat stuffing is fully cooked. Take out from the oven and discard the tops of the peppers.
  • Sprinkle the remaining mozzarella and Parmesan cheeses over the tops of the peppers. Bake until the cheese is melted, approximately two minutes.
  • Heat spaghetti sauce in a saucepan on the stove over medium heat, stirring regularly. Once the sauce starts to steam, remove from heat and drizzle over the peppers.
