Amaretto tart

Impress guests with a luscious amaretto dessert.
Ingredients:
  • 300g amaretti biscuits (see note), crushed
  • 120g unsalted butter, melted
  • 250ml milk
  • 200g white marshmallows
  • 3 tsp instant coffee
  • 40.00 ml amaretto liqueur
  • 150ml thickened cream
  • Toasted flaked almonds, to garnish
  • Melted dark chocolate, to drizzle
Instructions:
  • Preheat the oven to 170°C and lightly grease a 36cm x 12cm loose-bottomed tart pan.
  • Mix the biscuits with butter until well combined, then press into the pan to create the base and sides. Bake until golden brown, approximately 5 minutes. Allow to cool before proceeding.
  • In a saucepan over low heat, melt the marshmallows in the milk, stirring often. Mix in the coffee and liqueur until the mixture is smooth. Let it cool completely.
  • Whip the cream until it forms stiff peaks, then gently mix it into the marshmallow mixture. Pour the mixture into the tart shell and refrigerate for 2 hours or until firm.
  • Sprinkle the tart with toasted almonds and generously drizzle with melted chocolate before serving.
