Amazing Simple Thai Tofu

Delicious Asian-inspired peanut-ginger tofu dish served over fluffy white rice.
Ingredients:
  • 1 (14 ounce) package firm tofu, cut into 3/4 inch cubes
  • 0.33333334326744 cup chopped green onion
  • 1.5 teaspoons olive oil
  • 0.5 teaspoon sesame oil
  • 1 teaspoon soy sauce
  • 2 teaspoons grated fresh ginger root
  • 0.25 cup chunky peanut butter
  • 3 tablespoons flaked coconut
  • sesame seeds
Instructions:
  • In a skillet over medium-high heat, heat olive oil and sesame oil. Lower the heat to medium and sauté green onions for 1 minute. Add tofu and cook for 4 more minutes, sprinkling with soy sauce midway. Stir in peanut butter and ginger gently to incorporate them without breaking the tofu.
  • Take the dish off the heat and mix in the coconut. Then, move everything to a serving dish and finish with a sprinkle of sesame seeds.
