Stuffed skin-on chicken breasts with seasoned compound butter for juicy, flavorful results.
Ingredients:
  • 2 skin-on, boneless chicken breasts
  • 4 ounces horseradish-chive compound butter
  • 1 yellow onion, cut into 5 whole slices
  • 2 cups chicken stock
  • salt and freshly ground black pepper to taste
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Gently lift the skin on each chicken breast using your fingers. Slice the compound butter thinly and tuck it under the skin to generously coat the chicken.
  • First, arrange a bed of aromatic onion slices at the base of a clear glass baking dish. Gently pour in the flavorful chicken stock. Next, elegantly position the plump chicken breasts on top of the onion bed, showcasing the skin side. Finish with a sprinkle of salt and pepper to elevate the flavors.
  • Roast chicken in the preheated oven for 55-60 minutes, basting and rotating as needed for even crisping. Ensure chicken is cooked through by checking with an instant-read thermometer for a minimum internal temperature of 165 degrees F (74 degrees C).
