Grilled chicken salad with Southwest flair and creamy BBQ dressing.
Ingredients:
  • 2 skinless, boneless chicken breast halves
  • 1 head red leaf lettuce, rinsed and torn
  • 1 head green leaf lettuce, rinsed and torn
  • 1 fresh tomato, chopped
  • 1 bunch cilantro, chopped
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can black beans, drained
  • 1 (2.8 ounce) can French fried onions
  • 0.5 cup Ranch dressing
  • 0.5 cup barbeque sauce
Instructions:
  • Preheat the grill on high heat and grease the grate lightly with oil.
  • Grill chicken until juices run clear, around 6 minutes per side. Use an instant-read thermometer to ensure it reaches 165°F (74°C) at the center. Let it cool down, then slice.
  • Combine fresh lettuce varieties, ripe tomatoes, fragrant cilantro, sweet corn, and savory black beans in a generous bowl. Add tender grilled chicken slices and crispy French fried onions to create a delicious and colorful salad masterpiece.
  • Combine ranch dressing and barbecue sauce in a small bowl. Serve as a flavorful dip or toss with salad for a tangy coating.
