Sicilian grandma's cauliflower mac and cheese: Baked with garlicky mozzarella-Cheddar cheese sauce for ultimate comfort.
Ingredients:
  • 1 (16 ounce) package elbow macaroni
  • 1 head cauliflower, cut into chunks
  • 0.25 cup extra-virgin olive oil
  • 4 cloves garlic, or more to taste, minced
  • 1 pinch red pepper flakes
  • 2 cups shredded mozzarella cheese
  • 2 cups shredded Cheddar cheese
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • In 2 large pots of lightly salted boiling water, cook elbow macaroni until al dente, about 8 minutes, and cook cauliflower until tender yet firm, 3 to 6 minutes. Drain both macaroni and cauliflower.
  • Place an empty pot on the stove. Heat olive oil over medium heat. Saute garlic in the hot oil until fragrant, about 1 minute. Stir in red pepper flakes. Add drained cauliflower, reduce heat to medium-low, and continue sauteing for 2 minutes.
  • Combine the cooked macaroni with the cauliflower mixture, then mix in 1 3/4 cups of mozzarella and Cheddar cheeses until well blended. Transfer the mixture to a baking dish and sprinkle with the remaining cheeses.
  • Bake until golden and bubbling, approximately 30 minutes in the preheated oven.
