Creamy spiced dressing coats black beans and corn for a deliciously addictive summer salad. Perfect for sharing at any gathering.
Ingredients:
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1.5 cups frozen corn, thawed
  • 1 cup minced red bell pepper
  • 0.75 cup minced green bell pepper
  • 0.5 cup minced red onion
  • 1 tablespoon minced fresh parsley
  • 0.5 cup sour cream
  • 0.25 cup mayonnaise
  • 2 tablespoons red wine vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.25 teaspoon garlic powder
  • 0.125 teaspoon ground black pepper
Instructions:
  • Mix the black beans, corn, red bell pepper, green bell pepper, onion, and parsley in a bowl.
  • Combine sour cream, mayonnaise, red wine vinegar, cumin, chili powder, salt, garlic powder, and black pepper in a bowl. Drizzle over vegetable-bean mix and gently toss to coat.
