Grandma's classic slow-cooked green beans, smoked sausage, and potatoes for a budget-friendly and comforting meal.
Ingredients:
  • 2 pounds fresh green beans, trimmed
  • 4 cups water, or more as needed
  • 1 teaspoon salt, or to taste
  • 8 potatoes, peeled and quartered
  • 1 pound smoked sausage, cut into bite-sized pieces
Instructions:
  • In a large saucepan with a lid, place green beans and cover them with water. Stir in salt. Bring to a boil over medium heat, then reduce to low, cover, and simmer until beans are very tender, 3 to 4 hours, adding water as needed to keep them moist.
  • Simmer covered until potatoes are very tender and infuse with smoky sausage flavor along with the beans, for about 2 more hours.
