Savory ground pork in crispy lettuce cups with a side of tasty dipping sauce - a delicious and interactive appetizer.
Ingredients:
  • 0.25 cup white sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons ketchup
  • 0.125 teaspoon sesame oil
  • 1 tablespoon dry mustard
  • 2 teaspoons water, divided
  • 2 tablespoons brown sugar
  • 0.5 teaspoon rice vinegar
  • 3 tablespoons peanut oil, divided
  • 1 pound ground pork
  • 1 cup minced water chestnuts
  • 8 ounces chopped fresh mushrooms
  • 3 tablespoons chopped green onion
  • 1 teaspoon minced garlic
  • 1 head iceberg lettuce
  • 1 teaspoon red chile paste, or more to taste
Instructions:
  • In a small microwave-safe bowl, combine 1/2 cup water and white sugar. Microwave for about 30 seconds to dissolve the sugar. Stir in 2 tablespoons soy sauce, 2 tablespoons rice vinegar, ketchup, lemon juice, and sesame oil until well-blended. Cover the bowl with plastic wrap and chill for about 30 minutes.
  • Mix dry mustard with a splash of water, then gradually incorporate the remaining water until it resembles hot mustard.
  • Combine 2 tablespoons of soy sauce, brown sugar, and ½ teaspoon of rice vinegar in a small bowl, and whisk until smooth to create a flavorful stir-fry sauce.
  • In a hot wok or skillet, sizzle 2 tablespoons of peanut oil. Brown the pork for about 5 minutes, then add the remaining 1 tablespoon of oil along with water chestnuts, mushrooms, green onions, and garlic. Saute until flavors meld for about 2 minutes. Drizzle in the stir-fry sauce and toss until everything is evenly coated, cooking for another 3 to 4 minutes.
  • Remove the lettuce stem and wash well, discarding the outer leaf. Gently peel off whole leaves and slice in half lengthwise before arranging on a plate lined with paper towels.
  • Serve the dipping sauce in small bowls or ramekins, adjust spiciness by mixing in hot mustard and red chili paste. Fill lettuce halves with pork filling, roll them up, and top or dip in the sauce.
