Andy's Jalapeno Zucchini Bread

Spice up your zucchini bread with jalapenos and a mix of applesauce and oil for added flavor.
Ingredients:
  • 3 cups all-purpose flour
  • 1 cup white sugar
  • 1 cup brown sugar
  • 3.5 teaspoons ground cinnamon
  • 0.25 teaspoon baking powder
  • 0.25 teaspoon powdered jalapeno pepper
  • 0.5 cup vegetable oil
  • 0.5 cup applesauce
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 2 cups shredded zucchini
  • 2 fresh jalapeno peppers, chopped with seeds
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), while you generously grease two 9x5x3-inch loaf pans.
  • In a bowl, combine flour, white sugar, brown sugar, cinnamon, salt, baking soda, baking powder, and powdered jalapeno pepper. Mix in vegetable oil, applesauce, and eggs until smooth. Gently fold in zucchini and fresh jalapenos. Transfer batter to loaf pans and bake.
  • Bake in the preheated oven for about 1 hour, or until a toothpick inserted in the center comes out clean. Then, transfer the bread to a wire rack to cool.
