Slow cook pork shoulder with green salsa, onion, cilantro, and serrano chiles; perfect for tacos, enchiladas, or burritos.
Ingredients:
  • 1 white onion, chopped
  • salt and pepper to taste
  • 2.5 pounds pork shoulder roast
  • 1 (16 ounce) jar green salsa (such as Frontera®)
  • 0.5 cup chopped fresh cilantro
  • 2 serrano chile peppers, or to taste
Instructions:
  • Place chopped onion on the bottom of the slow cooker. Season pork shoulder with salt and pepper, then place on top of the onion. Pour green salsa over the pork, sprinkle with cilantro, and drop in serrano chile peppers.
  • Slow cook until the meat is tender and falls apart effortlessly for approximately 8 hours. Carefully transfer the pork to a cutting board. Strain and discard around half of the liquid left in the slow cooker, keeping the rest. Optionally, remove and discard the onions, peppers, and cilantro.
  • Using two forks, pull apart the tender pork shoulder. Combine the succulent pork with the flavorful reserved cooking liquid before serving.
