Christmas citrus tea cookies: soft, cake-like treats perfect for the holidays. Great with tea!
Ingredients:
0.5 cupmargarine
0.5 cupwhite sugar
3eggs
0.5 teaspoonvanilla extract
0.5orange, juiced
3.5 cups all-purpose flour
1tablespoonbaking powder
0.5 teaspoonbaking soda
1teaspoonfresh lemon juice
2tablespoons milk
0.25 cupsprinkles or colored sugarfor decoration
Instructions:
Preheat your oven to 350 degrees F (175 degrees C) and grease your cookie sheets.
Combine margarine and sugar in a large bowl until smooth. Add eggs one at a time, followed by vanilla and orange juice. Mix flour, baking powder, and baking soda in a separate bowl, then fold into the orange mixture. The dough will be thick and sticky. Scoop teaspoonfuls of dough onto cookie sheets.
Bake in a preheated oven for 10 minutes, or until golden brown. Allow to cool on wire racks.
Combine confectioners' sugar, lemon juice, and milk in a small bowl until smooth. Dip the cooled cookies' tops in the icing, then in sprinkles. Allow to set.
