Homemade anko: Sweet red bean paste for cakes and pastries in Asian desserts.
Ingredients:
  • 1 cup dried red beans
  • 1.5 cups white sugar
Instructions:
  • Assemble all necessary ingredients.
  • In a saucepan, cover beans with 2 cups of water and bring to a boil. Simmer for 5 minutes.
  • Transfer the drained beans to a fresh saucepan.
  • Pour 2 to 3 cups of water into the pot and bring it to a boil. Lower the heat, cover, and let it simmer. Add more water if necessary until the beans are tender and can be easily crushed between your fingers, which should take about 1 1/2 to 2 hours.
  • After draining beans, put them back in the saucepan and sprinkle in the sugar before placing it over medium-high heat.
  • Stir continuously until the sugar melts and the beans create a glossy paste, approximately 10 minutes.
  • Transfer the mixture to a container to cool down right away.
