Bake delightful carrot-pineapple cupcakes with chocolate chips in a Panasonic oven, shaped like cute pumpkins with vibrant orange frosting.
Ingredients:
  • 2 cups cake flour
  • 2 teaspoons ground cinnamon
  • 1.5 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1.5 cups vegetable oil
  • 4 eggs
  • 2 cups grated carrots
  • 1 (8 ounce) can crushed pineapple, drained
  • 1 tablespoon cake flour
  • 0.5 cup semisweet chocolate chips
  • 0.5 cup butter
  • 1 (8 ounce) package cream cheese, softened
  • 1 tablespoon vanilla extract
  • 2 cups confectioners' sugar, or more as needed
  • 3 drops orange food coloring
  • 1 (1.5 ounce) tube black decorating gel
Instructions:
  • Preheat oven to 325 degrees F (165 degrees C), or 325 degrees F for a countertop induction oven. Grease 12 pumpkin-shaped cupcake molds, preferably silicon molds.
  • Combine 2 cups of cake flour, cinnamon, baking soda, baking powder, and salt by sifting them in a bowl. Mix in sugar, oil, and eggs until well combined, then stir in carrots and pineapple into the batter.
  • In a bowl, coat walnuts and chocolate chips with 1 tablespoon of cake flour before folding them into the batter.
  • Fill cupcake molds two-thirds full with batter and tap gently on work surface to eliminate air bubbles.
  • Bake the cupcakes in a preheated oven until a toothpick inserted in the center comes out clean, for around 20-25 minutes (or 15-20 minutes in the countertop induction oven). Let them cool to room temperature for 15-20 minutes before removing from the molds.
  • In a bowl, mix butter, cream cheese, and vanilla extract with an electric mixer for 4 to 6 minutes until well combined. Gradually add confectioners' sugar while mixing on low speed until the frosting is smooth. Stir in lemon juice and orange food coloring until fully incorporated. Chill in the fridge for 15 to 20 minutes until set.
  • Spread the cream cheese frosting on top of the cupcakes and then embellish with black decorating gel.
