Traditional Greek biscuits soaked in honey syrup for a mouthwatering experience.
Ingredients:
  • 250ml (1 cup) olive oil
  • 80ml (1/3 cup) fresh orange juice
  • 30.00 ml brandy
  • 315g (1 1/2 cups) caster sugar
  • 525g (3 1/2 cups) plain flour, sifted
  • 4.00 gm baking powder
  • 1.25 gm bicarbonate of soda
  • 185ml (3/4 cup) water
  • 185ml (3/4 cup) good-quality honey
  • 60g (1/2 cup) finely chopped walnuts
Instructions:
  • Preheat your oven to 175°C and line 2 baking trays with non-stick baking paper.
  • In a large bowl, combine olive oil, orange juice, brandy, and one-third of the sugar. Add flour, baking powder, and bicarbonate of soda, then mix until fully incorporated.
  • Roll the mixture into tablespoon-sized balls and space them about 4cm apart on the prepared trays. Flatten each ball with a fork. Bake for 30-35 minutes, swapping trays halfway through, until golden brown.
  • In a medium saucepan over medium heat, combine water, honey, and remaining sugar. Stir until the sugar dissolves. Increase heat to high and bring to a boil, then simmer for 5 minutes until the syrup thickens. Let it cool slightly before using.
  • Take the biscuits out of the oven and drizzle with syrup. Allow them to rest on the trays for 20 minutes to soak up the flavors. Transfer to a serving plate and sprinkle with walnuts before serving.
