Elevate banana muffins with whole wheat flour, cacao nibs, flax seeds, and nuts for a nutritious twist.
Ingredients:
  • 0.33333334326744 cup melted butter
  • 3 ripe bananas, or more to taste, mashed
  • 0.5 cup white sugar
  • 1 egg, beaten
  • 1 pinch salt
  • 0.75 cup all-purpose flour
  • 0.75 cup whole wheat flour
  • 0.5 cup coconut flakes
  • 0.25 cup unsweetened cacao nibs
  • 0.25 cup flax seeds
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin by greasing it or lining the cups with paper liners.
  • In a large mixing bowl, combine mashed bananas and butter using a wooden spoon. Add sugar, egg, and vanilla extract. Sprinkle baking soda and salt, then blend. Mix in all-purpose and whole wheat flours until just combined. Gently fold in coconut, walnuts, cacao nibs, and flax seeds.
  • Divide the batter evenly among the muffin cups.
  • Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center comes out clean.
