Anne's Potato Pancakes

Crispy potato pancakes, perfect with sour cream, applesauce, or ketchup.
Ingredients:
  • 8 medium red potatoes, with peel, shredded
  • 1 large sweet onion, minced
  • 3 eggs, lightly beaten
  • 3 tablespoons all-purpose flour
  • 0.5 teaspoon baking powder
  • 1 tablespoon dried rosemary
  • 1 tablespoon salt
  • 2 teaspoons ground black pepper
  • 1.5 teaspoons lime juice
  • 2 tablespoons vegetable oil
Instructions:
  • Combine the red potatoes, onion, eggs, flour, baking powder, rosemary, salt, pepper, and lime juice in a large bowl.
  • In a skillet over medium-high heat, heat the oil until shimmering. Spoon 2/3 cup of the potato mixture into the skillet and flatten with a spatula into a pancake. Cook until crispy and golden brown, about 3 to 4 minutes per side. Transfer to paper towels to drain. Repeat with the rest of the potato mixture.
