Summery fruit salsa with kiwis, apples, and berries paired with crispy cinnamon tortilla chips is a delightful, refreshing snack.
Ingredients:
  • 16 ounces strawberries, quartered
  • 2 medium Golden Delicious apples - peeled, cored and diced
  • 2 kiwis, peeled and diced
  • 8 ounces raspberries
  • 3 tablespoons fruit preserves, any flavor
  • 2 tablespoons white sugar
  • 1 tablespoon brown sugar
  • 10 (10 inch) flour tortillas
  • butter-flavored cooking spray
  • 2 tablespoons cinnamon sugar
Instructions:
  • Prepare the salsa: Combine strawberries, apples, kiwis, raspberries, fruit preserves, white sugar, and brown sugar in a large bowl. Mix well and refrigerate while making the cinnamon chips.
  • Preheat the oven to 350°F (175°C) and prepare two baking sheets with parchment paper.
  • Prepare the chips: Stack tortillas and slice them into wedges. Place the wedges in a single layer on baking sheets. Spray with cooking spray, sprinkle with cinnamon sugar, then spray again before baking.
  • Place in the preheated oven until beautifully golden and crispy, for 8 to 10 minutes. Let cool for about 15 minutes on the baking sheets, then enjoy with chilled fruit salsa.
