Savor zesty lime-spiced chicken over fragrant jasmine rice with chopsticks.
Ingredients:
  • 36.40 gm light olive oil, to fry
  • 2 large chicken breasts, fat trimmed, finely chopped
  • 250.00 ml chopped snake beans or French beans or baby eggplant, optional
  • 2-3 bird's eye chillies, chopped
  • 1 pkt (about 375g) peanuts, crushed while in the packet
  • 1 bunch Thai basil, leaves picked (see note)
  • 48.80 gm fish sauce
  • 42.00 gm lime juice
  • Steamed jasmine rice, to serve
Instructions:
  • In a sizzling pan, cook the chicken in hot oil until it browns (2-3 minutes). Toss in beans, chili, peanuts, and half the basil.
  • Continue cooking for 2-3 minutes more, then mix in the fish sauce and lime juice. Just before serving, sprinkle in the rest of the basil.
  • Serve alongside fragrant jasmine rice for a delightful meal!
