Kid-friendly apple cinnamon oat slice with yogurt topping. Easy to make with layers of rolled oats base, apple cinnamon filling, and creamy yogurt. Requires 3-4 hours chilling time. Delicious and perfect for a snack or dessert.
Ingredients:
  • 360g (4 cups) traditional rolled oats
  • 165g (3/4 cup, firmly packed) brown sugar
  • 200g butter, chopped
  • 80ml (1/3 cup) golden syrup
  • 6 pink lady apples, peeled, cored, thinly sliced
  • 21.00 gm lemon juice
  • 2.50 gm ground cinnamon
  • 6.00 gm powdered gelatine
  • 180g white chocolate, chopped, melted
  • 90g (1/3 cup) natural yoghurt
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Prepare a 20 x 30cm slice pan by greasing and lining it with baking paper, ensuring the paper extends 3cm over the long sides.
  • In a large bowl, combine oats. In a small saucepan over low heat, melt sugar, butter, and syrup until smooth. Pour the mixture over oats and mix thoroughly. Press the mixture into the pan base. Bake for 25-30 minutes until golden. After removing from the oven, gently press down to compact (mixture will firm up when cooled). Let it rest.
  • In a medium saucepan, combine apples, lemon juice, cinnamon, and 1/4 cup water. Cover with a lid and simmer over medium heat for 20 minutes, stirring occasionally, until the apples are tender. Remove from heat.
  • Transfer the apple mixture to a food processor and blend until smooth. Sprinkle half of the gelatine over the mixture and blend until well combined. Add the remaining gelatine, blend again until fully combined, and then spread the apple mixture over the flapjack base, smoothing the top.
  • For the yogurt topping, melt the chocolate in a small heatproof bowl placed over a pan of simmering water. Ensure the bowl doesn't touch the water. Stir until smooth, then mix in the yogurt until well combined. Spread the mixture over the apple layer and chill in the refrigerator for 3-4 hours until firm.
  • Slice and present.
