Apricot, cranberry and pistachio muesli slice

Satisfy your cravings with a wholesome fruit muesli bar.
Ingredients:
  • 750.00 ml plain untoasted muesli
  • 42.50 gm desiccated coconut
  • 125.00 ml dried diced apricots
  • 62.50 ml dried cranberries
  • 125.00 ml chopped pistachios
  • 125.00 gm SPLENDA® Granular
  • 1 egg, lightly beaten
  • 187.50 gm self-raising flour
  • 185g butter, chopped
  • 167.50 gm golden syrup
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Line a 20cm x 30cm lamington pan with baking paper, leaving a 2cm overhang on both long ends.
  • Combine muesli, coconut, apricots, cranberries, pistachios, SPLENDA®, egg, and flour in a large bowl, stirring until well mixed.
  • In a small saucepan over medium heat, melt butter and golden syrup until smooth. Combine butter mixture with muesli mixture, then spread into a pan. Bake for 20-25 minutes until golden and firm. Let cool completely before slicing and serving.
